How This Comes Together
Start by soaking your poha just until soft, not mushy. You should be able to press it easily between your fingers.
Meanwhile, heat oil in a pan and add mustard seeds. Once they start popping, add cumin seeds, chana dal, and urad dal.
Let them turn golden; this adds a beautiful crunch to your otherwise soft dumplings.
Add chopped onions, ginger, and green chilli. Sauté until the onions turn slightly golden and aromatic.
Now add curry leaves, asafoetida, and salt. Give everything a quick mix.
Toss in the grated coconut and stir gently. At this point, your kitchen will smell warm, nutty, and comforting.
Turn off the heat and mix in the soaked poha.
Use your hands to gently combine everything; the texture should be soft but shapeable.
Now shape them into small dumplings, no need to be perfect. Rustic shapes work beautifully here.
Place them in a steamer or idli cooker and steam for about 10 minutes.
Once done, they turn soft, fluffy, and slightly firm on the outside.
