Ingredients
250g boneless chicken (cleaned)
1 onion (sliced)
1 garlic (separated cloves)
6dry red chilli
Curry leaves (as needed)
0.25tsp salt
0.5tsp turmeric powder (half for marination and another half for cooking)
0.25tsp chilli powder
1tsp kashmiri chilli powder
1tsp coriander powder
1tsp rock salt
Instructions
Prep Work

Clean chicken
Wash and drain the chicken pieces well and keep aside

Slice onionPeel and slice the onion thinly

Separate garlicPeel garlic cloves and keep ready

Marinate chicken
Mix chicken with salt, turmeric powder, and chilli powder and set aside for a while

Fry onionsHeat oil in a pan and deep fry sliced onions until golden and crisp, then remove it

Fry garlicIn the same pan deep fry garlic cloves until aromatic and crisp, then remove it

Fry red chilliesFry dried red chillies on low heat until crisp and keep aside

Cook chickenAdd marinated chicken in batches and roast until fully cooked and slightly crisp

Fry curry leavesFry curry leaves until crisp and aromatic

Cool ingredientsLet all fried ingredients cool completely before grinding

Grind chickenPulse the cooked chicken to a coarse texture in a mixer
