1 onion (finely chopped)
2green chilli (finely chopped)
1tsp ginger garlic paste
1/4tsp turmeric powder
2tsp kashmiri chilli powder
1 1/2tsp coriander powder
1/4tsp pepper
Salt (as needed)
Pepper (as needed)
1tsp garam masala
Water (as needed)
Instructions
Prep Work

Slice eggplant
Cut the eggplant into thin strips while keeping the crown intact so it stays together

Chop veggiesFinely chop onion and green chilli and keep ready

Whisk eggsCrack eggs into a bowl, add salt and pepper, whisk lightly and keep aside

Cook eggplant
Add eggplant to salted water and cook for about 10 minutes until soft, then remove and set aside

Saute baseHeat oil in a wide pan, add chopped onion and green chilli, cook until soft

Add pasteAdd ginger garlic paste and cook until the raw smell disappears

Add spicesAdd turmeric, chilli powder, coriander powder, pepper, salt, and garam masala, mix well on low heat

Cook masalaAdd a little water and cook briefly until everything comes together
