Ingredients
To make marinade chicken
1kg chicken (with bones)
1tsp turmeric powder
1tsp salt
2tsp ginger garlic paste
To make garlic chicken fry
3tbsp oil
3 onion (thinly sliced)
Marinated chicken
8green chilli (slit)
3tsp kashmiri chilli powder
2tsp coriander powder
1tsp cumin powder
20garlic cloves (roughly pounded)
Curry leaves (as needed)
Instructions
Prep Work

Clean chicken
Wash and clean the chicken pieces and place them in a bowl

Slice onionsThinly slice the onions and keep them ready

Slit chilliesSlit the green chillies lengthwise

Pound garlicRoughly crush the garlic cloves using a mortar and pestle
Method

Marinate chicken
Add turmeric, salt, and ginger garlic paste to the chicken and mix well. let it rest for about 10 minutes.

Saute onionsHeat oil in a kadai and add sliced onions. Cook until golden

Add chickenAdd the marinated chicken and mix well. Cook for 5 minutes

Add chilliesAdd slit green chillies, mix, cover and cook for 5 minutes.

Cook till dryContinue cooking until moisture evaporates

Add spice powdersAdd chilli, coriander, and cumin powder. Toss well

Add garlicAdd crushed garlic and mix well with chicken

Roast furtherCook for some more time until well roasted

Finish with curry leavesAdd fresh curry leaves and switch off the stove
