Gulgule by Hema Subramanian is a traditional sweet made with wheat flour and jaggery, deep-fried until soft and golden. A perfect festive snack or tea-time treat.
Ingredients
1 1/2cup wheat flour
1cup jaggery
1cup water
2tsp sooji (rava)
2tsp fennel seeds
1 1/2tsp cardamom powder
1/4tsp baking powder
oil (for deep frying)

Prep Work

Melt jaggeryHeat jaggery with water until completely melted

Strain syrupStrain the jaggery syrup and keep aside

Arrange dry ingredientsAdd wheat flour, sooji, fennel seeds and cardamom powder to a bowl

Keep oil readyHeat oil for deep frying

Prepare syrupTake jaggery and water in a pan and let it melt completely

Cool syrupKeep the jaggery syrup aside

Mix dry ingredientsAdd wheat flour, semolina, fennel seeds and cardamom powder to a bowl and mix well

Add jaggery syrupStrain the melted jaggery syrup into the bowl and mix everything well

Rest batterKeep the batter aside and let it rest

Add baking powderAdd baking powder and mix well

Heat oilHeat oil for deep frying

Fry gulguleDrop small portions of batter into the oil and fry until golden brown

Remove from oilFry until dark golden brown and remove from oil

Serve hotServe the gulgule hot and fresh
