1tsp salt
water (as needed)

2tsp oil
2 cinnamon
3 cardamom
5 cloves
1 onion (sliced)

2tsp coriander powder
For gravy
2tbsp oil
2 onion (sliced)

Instructions
Prep Work

Clean mutton
Wash the mutton pieces well and keep them ready

Slice onionsSlice all the onions thin and keep aside

Prep aromaticsChop ginger and keep garlic, chillies, and curry leaves ready
Method

Cook mutton
Take mutton in a pressure cooker, add salt and enough water to cover it. cook for 10 whistles until soft and tender. keep the mutton and stock aside

Roast spicesHeat a portion of oil in a pan and add cinnamon, cardamom, and cloves. Roast until aromatic

Saute baseAdd sliced onion, garlic, ginger, cashews, and green chillies. Sauté until onions turn light golden

Add coconutAdd grated coconut and roast briefly, then switch off and cool completely

Grind masalaTransfer to mixer, add fennel seeds and coriander powder. Grind first without water, then add water and make a smooth paste

Cook gravy baseHeat remaining oil in a wide pan. add sliced onions and sauté well
