Mutton Samosa by Hema Subramanian is a crispy and delicious snack made with spicy mutton keema filling and golden fried pastry. Perfect for tea time or special occasions.
Ingredients
To make filling
1/2kg minced mutton
3tsp oil
1 onion (finely chopped)
2green chilli (finely chopped)
1 tomato (deseeded and chopped)
1/2tsp turmeric powder
2tsp chilli powder
1tsp cumin powder
1tsp coriander powder
1tsp salt
2tsp ginger garlic paste
1tsp garam masala
1/2cup water
coriander leaves (chopped)
To make samosa sheets
2cups maida
1/2tsp salt
2tbsp oil
water (as needed)
To make maida paste
3tsp maida
water (as needed)
For frying
oil (for deep frying)
Instructions
Prep Work

Chop onionsFinely chop the onions and keep them ready

Chop green chilliesFinely chop the green chillies for the filling

Prepare tomatoesDeseed and chop the tomatoes into small pieces

Chop coriander leavesFinely chop the coriander leaves and keep aside

Prepare doughMix the flour, salt, oil, and water to make a soft dough

Make maida pasteMix flour and water into a thick paste for sealing
Method

Sauté onions and chilliesHeat oil in a pan and sauté onions and green chillies until the onions turn golden

Add tomatoesAdd tomatoes and cook until they soften nicely

Add spice powdersAdd turmeric powder, chilli powder, cumin powder, coriander powder, and salt then mix well

Add ginger garlic pasteAdd ginger garlic paste and sauté until the raw smell disappears

Cook minced muttonAdd minced mutton and cook until the juices release

Add garam masalaSprinkle garam masala and mix everything well

Simmer fillingPour water, cover the pan, and cook the filling on medium flame for 15 minutes

Finish fillingAdd coriander leaves and cook until the moisture dries up then keep aside

Knead doughKnead the dough well until smooth and soft

Rest doughApply oil over the dough, cover, and let it rest for 30 minutes

Roll sheetsDivide the dough and roll into thin sheets

Lightly cook sheetsPlace the sheets on a hot pan and cook briefly on both sides

Cut sheetsStack the sheets and cut them into squares then into halves

Shape samosasfold the sheets into cones and fill them with the mutton mixture

Seal samosasSeal the edges using the prepared flour paste

Prepare all samosasRepeat the same process for the remaining filling and sheets

Fry samosasHeat oil and fry the samosas on medium low flame until golden brown

Garnish and serveRemove the samosas and garnish with fried curry leaves and green chillies
