Sabudana Idli by Hema Subramanian is a soft and fluffy fasting recipe made with sabudana and simple ingredients. A light and healthy dish perfect for vrat or breakfast.
Ingredients
1/2cup sabudana
1cup sooji / rava
4tsp oil
1tsp mustard seeds
1tsp cumin seeds
cashew nuts
1/4tsp hing / asafoetida
ginger (finely chopped)
1green chilli (finely chopped)
coconut (finely chopped)
curry leaves (chopped)
1 onion (finely chopped)
1/2tsp salt
coriander leaves (chopped)
1cup whisked curd
water (as needed)
Instructions
Prep Work

Soak SabudanaWash the sabudana well and soak it in enough water overnight until soft.

Chop IngredientsFinely chop the ginger, green chilli, onion, curry leaves and coriander leaves. Chop the coconut into small pieces.

Whisk CurdWhisk the curd until smooth and keep it ready.
Method

Prepare TemperingHeat oil in a wide kadai. Add mustard seeds and cumin seeds. Once they splutter, add cashew nuts and fry until golden.

Saute AromaticsAdd hing, ginger, green chilli, coconut and curry leaves. Saute well for a few minutes.

Cook OnionAdd chopped onion and cook until soft and lightly golden.

Roast RavaAdd salt and rava. Roast on low flame until aromatic.

Cool MixtureSwitch off the stove and transfer the roasted rava mixture to another bowl.

Mix SabudanaAdd soaked sabudana and coriander leaves to the rava mixture and mix well.

Add CurdAdd whisked curd and mix everything together until combined.

Rest BatterAdd little water if needed and let the batter rest until slightly thick.

Fill Idli PlatesGrease the idli plates with oil and gently pour the batter into each mould.

Steam IdlisPlace the idli plates in the steamer and cook until the idlis are soft and cooked through.

Serve HotRemove the idlis carefully and serve hot with coconut chutney or any chutney of your choice.
