Ingredients
To make ground masala
1tsp peppercorns
1tsp fennel seeds
6cloves garlic
1piece ginger (chopped)
1small piece tamarind
To make soya rice
2cups soya chunks
1cup basmati rice (cooked, 250 ml cup)
2tbsp oil
1tsp mustard seeds
1tsp cumin seeds
1 onion (finely chopped)
2green chilli (chopped)
1/4tsp turmeric powder
1tsp kashmiri chilli powder
1tsp cumin powder
1tsp coriander powder
1tsp garam masala
1tsp salt
1/4cup water
Curry leaves (as needed)
Coriander leaves (chopped)
Instructions
Prep Work

Cook soya chunks
Boil soya chunks in water with salt, cook for 5 minutes until soft, then drain and squeeze out the excess water and keep it aside.

Prepare masala pasteGrind peppercorns, fennel, garlic, ginger and tamarind into a coarse mixture

Chop ingredientsFinely chop onion, green chilli and coriander leaves

Cook riceCook basmati rice and let it cool slightly before using

Temper spices
Heat oil in a kadai, add mustard seeds and cumin seeds and let them splutter

Saute baseAdd chopped onion and green chilli and sauté until soft

Add ground masalaAdd the freshly ground masala. Keep the flame on low and mix well with onions.

Add spice powdersAfter 2 minutes, add turmeric, chilli powder, cumin powder, coriander powder, garam masala and salt, then mix well

Cook masalaAdd a little water and cook until the masala thickens slightly

Add soya chunksAdd the cooked soya chunks and mix until well coated

Add curry leavesAdd curry leaves and mix again

Simmer brieflyCover and cook for 2 minutes to absorb flavors

Mix riceGently add cooked rice and mix without breaking the grains. And check for seasoning and adjust if needed.
