Prep Work

  1. Cook soya chunks

    Boil soya chunks in water with salt, cook for 5 minutes until soft, then drain and squeeze out the excess water and keep it aside.

  2. Prepare masala paste

    Grind peppercorns, fennel, garlic, ginger and tamarind into a coarse mixture
  3. Chop ingredients

    Finely chop onion, green chilli and coriander leaves
  4. Cook rice

    Cook basmati rice and let it cool slightly before using

Method

  1. Temper spices

    Heat oil in a kadai, add mustard seeds and cumin seeds and let them splutter

  2. Saute base

    Add chopped onion and green chilli and sauté until soft
  3. Add ground masala

    Add the freshly ground masala. Keep the flame on low and mix well with onions.
  4. Add spice powders

    After 2 minutes, add turmeric, chilli powder, cumin powder, coriander powder, garam masala and salt, then mix well
  5. Cook masala

  7. Add curry leaves

    Add curry leaves and mix again
