    Take cleaned chicken pieces, add turmeric powder, red chilli powder and salt, mix well and keep aside

  2. Prep gongura

    Wash sorrel leaves and keep them ready along with green chillies
  3. Soak rice

    Soak basmati rice in water for 30 minutes and set aside

  1. Make gongura base

    Heat oil in a pan, add sorrel leaves, green chillies and salt, sauté until leaves shrink and cool them

  2. Grind paste

    Transfer mixture to mixer, add a little water and grind to a smooth paste
  3. Heat fats

    Add ghee and oil to cooker and heat it
  4. Add whole spices

    Add whole spices and sauté briefly until aromatic
  5. Cook onions

    Add sliced onions and slit green chillies, saute until golden brown
  6. Add aromatics

    Add ginger garlic paste and sauté briefly, then add tomatoes and cook slightly

  14. Rest biryani

    Turn off heat and let biryani rest for 10 minutes
