To make gongura paste
1tsp oil
1bunch sorrel leaves
3green chilli
1/2tsp salt
Water (as needed)
To make gongura chicken biryani
500g basmati rice (soaked)
1kg chicken (cleaned)
1tsp turmeric powder
2tbsp ghee
2tbsp oil
Whole spices (bay leaf, star anise, mace, cinnamon, kapok buds, fennel seeds, cardamom, cloves, stone flower)
3 onion (sliced)
3green chilli (slit)
2tsp ginger garlic paste
3 tomato (chopped)
Water
Coriander leaves (chopped)
3 1/2tsp salt
Instructions
Prep Work

Clean and marinate chicken
Take cleaned chicken pieces, add turmeric powder, red chilli powder and salt, mix well and keep aside

Prep gonguraWash sorrel leaves and keep them ready along with green chillies

Soak riceSoak basmati rice in water for 30 minutes and set aside
Method

Make gongura base
Heat oil in a pan, add sorrel leaves, green chillies and salt, sauté until leaves shrink and cool them

Grind pasteTransfer mixture to mixer, add a little water and grind to a smooth paste

Heat fatsAdd ghee and oil to cooker and heat it

Add whole spicesAdd whole spices and sauté briefly until aromatic

Cook onionsAdd sliced onions and slit green chillies, saute until golden brown

Add aromaticsAdd ginger garlic paste and sauté briefly, then add tomatoes and cook slightly

Add chickenAdd marinated chicken and cook on medium flame for 5 minutes

Add gongura pasteAdd prepared sorrel paste and mix well, cook for a further 5 minutes to blend flavors

Add water and saltAdd water and salt, mix everything well

First cookClose lid and cook for two whistles on medium flame, let pressure release naturally

Cook on lowAdd coriander leaves, cover and cook on low flame until steam builds
