How This Ivy Gourd Rice Comes Together

The recipe begins by preparing a flavorful spice paste using onions, garlic, coriander seeds, cumin seeds, tamarind, turmeric, chilli powder, and rock salt. The ingredients are blended into a smooth paste with just enough water to achieve the right consistency.

Meanwhile, sliced ivy gourd is stir-fried until lightly golden. This step enhances its flavor while giving it a pleasant texture that holds up well when mixed with the rice.

In the same pan, a traditional South Indian tempering is prepared with mustard seeds, cumin seeds, chana dal, urad dal, red chillies, curry leaves, and hing. Chopped onions are sautéed until golden, creating a rich flavor base.

The freshly ground masala is then cooked thoroughly until it thickens and the raw aroma disappears. The stir-fried ivy gourd is added back to the pan and coated evenly with the masala.

Finally, cooked basmati rice is gently folded into the mixture, ensuring every grain is coated with the aromatic spices. A spoonful of ghee and freshly chopped coriander complete the dish, adding richness and freshness.

The result is a fragrant, flavorful rice that pairs beautifully with simple accompaniments or can be enjoyed on its own.

Pro Tip💡: Allow the cooked rice to cool slightly before mixing it with the masala. This helps keep the grains separate and prevents the rice from becoming mushy.

The dish remains aromatic and delicious.

Why This Recipe Works So Well

The homemade masala is what sets this recipe apart.

Instead of relying on ready-made spice mixes, freshly ground ingredients create deeper, more authentic flavors. Stir-frying the ivy gourd separately preserves its texture, while the tempering adds layers of crunch and aroma.

The combination results in a rice dish that’s comforting, flavorful, and perfect for everyday meals.

This rice pairs wonderfully with:

A simple bowl of curd and crispy papad is often all you need for a complete meal.

How to Serve

  • A drizzle of ghee
  • Lemon wedges
  • Crispy papad

It’s equally delicious for lunch, dinner, or festive family meals.

  • It reheats well
  • No elaborate side dish is required

Pack it with curd, pickle, or roasted papad for a complete meal.
