Prep Work

  1. Soak red chillies

    Soak the red chillies in water until they soften

  2. Soak chana dal

    Soak chana dal in water so it softens before adding to batter
  3. Chop vegetables

    Finely chop onions, green chillies, curry leaves and coriander leaves
  4. Prepare chutney base

    Add soaked red chillies, onion, garlic, tamarind, rock salt and cumin seeds to a mixer jar and grind to a thick paste without adding water

Method

  1. Temper chutney

    Heat oil in a small pan and add urad dal, mustard seeds and cumin seeds. allow them to splutter

  2. Add curry leaves

    Add curry leaves and roast briefly to release aroma
  3. Saute chutney

    Add the ground chutney to the tempering and saute for a minute then switch off the stove and transfer to a bowl
  4. Prepare bonda batter

    Add dosa batter to a bowl and mix in chopped onions, soaked chana dal, green chillies, curry leaves and coriander leaves
  5. Season batter

    Add salt and mix everything well until evenly combined
  6. Heat oil

    Heat enough oil in a kadai for frying
  7. Drop batter
