How This Comes Together
Start by preparing all the vegetables evenly so they cook at the same pace.
Now comes the heart of the recipe, the masala paste.
Into a mixer jar goes:
- Fresh coconut
- Roasted gram
- Cashews
- Whole spices
- Ginger
- Garlic
- Green chillies
- Mint
- Coriander
- Curry leaves
As everything blends together, the aroma itself tells you this curry is going to be special.
The masala becomes smooth, creamy, and beautifully greenish from the herbs.
Now heat oil in a wide kadai.
Add mustard seeds and cumin seeds.
As they splutter, add chopped onions and sauté until soft and translucent.
Next, add potatoes first since they take longer to cook.
Then go in:
- Carrots
- Beans
- Green peas
- Tomatoes
Cook briefly with salt.
Pour water, cover, and let the vegetables soften gently.
Now stir in the freshly ground masala paste.
Instantly, the curry transforms into a thick aromatic sagu.
Add remaining water and simmer gently until:
- The raw coconut smell disappears
- The gravy thickens slightly
- Oil starts appearing lightly on top
And that’s it.
A rich, comforting Karnataka-style Vegetable Sagu ready to serve hot.
Pro Tip💡:Don’t overcook the vegetables completely before adding masala. Slightly firm vegetables absorb flavor better while simmering.
